Peel, core and quarter enough apples to fit in your crock pot. Add cinnamon and simmer on high while stirring and mashing often.
As it cooks down, add more apples. When you have cooked all the apples to an apple sauce consistency, pour on fruit tray for your dehydrator and dehydrate away. Roll in plastic wrap for storage.
You can freeze what you don't dry for a later date and turns out just as tasty as the fresh batch.
It is very yummy!
